Description

These Chicken and Cheese Pastry Rolls are a savory, flaky delight, filled with tender chicken, melted cheese, and seasonings, all wrapped in buttery, golden pastry. Perfect as a quick snack, appetizer, or dinner, they’re sure to be a crowd-pleaser at any meal.

Ingredients

Scale
  • 2 cups cooked chicken, shredded (about 2 medium chicken breasts)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1/2 tsp dried thyme or Italian seasoning
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 sheet puff pastry (or 2 if you prefer larger rolls)
  • 1 egg (for egg wash)
  • 1 tbsp milk (for egg wash)

Instructions

  1. Prepare the Filling:
    • In a large mixing bowl, combine the shredded cooked chicken, mozzarella cheese, cream cheese, Parmesan cheese, finely chopped onion, minced garlic, thyme, salt, and pepper. Mix well until all ingredients are evenly distributed. Set aside.
  2. Prepare the Pastry:
    • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
    • Roll out the puff pastry sheet(s) on a lightly floured surface. If using one large sheet, cut it into 4 equal squares. If using two sheets, cut them into 6 rectangles or squares.
  3. Assemble the Rolls:
    • Spoon a generous amount of the chicken and cheese mixture into the center of each pastry square or rectangle.
    • Fold the pastry over the filling to form a neat roll, pinching the edges to seal the roll tightly. You can fold them into triangles or rectangles, depending on your preference.
  4. Apply the Egg Wash:
    • In a small bowl, beat the egg with the milk to create an egg wash. Brush the top of each pastry roll with the egg wash to give them a golden, glossy finish when baked.
  5. Bake:
    • Arrange the filled pastry rolls on the prepared baking sheet, ensuring they are spaced evenly apart.
    • Bake in the preheated oven for 15-20 minutes or until the pastry is golden brown and puffed up.
  6. Serve:
    • Remove the pastry rolls from the oven and let them cool slightly before serving.
    • Serve warm as a snack, appetizer, or light meal, and enjoy the deliciously cheesy, savory flavor!

Notes

  • Chicken: You can use rotisserie chicken or leftover cooked chicken for convenience, or cook and shred your own chicken breasts.
  • Cheese: Feel free to use any cheese you prefer, such as cheddar or gouda, to customize the flavor.
  • Spices: Experiment with different herbs like rosemary or basil for additional flavor. You can also add a pinch of red pepper flakes for some heat.
  • Freezing: These pastry rolls can be made ahead and frozen. Assemble the rolls, then freeze them on a baking sheet before transferring them to a freezer bag. Bake from frozen, adding a few extra minutes to the cooking time.
