Description

Ingredients

  • 1 tbsp olive oil
  • 1 lb skinless, boneless chicken breasts, cubed
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 tsp ground cumin
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp pepper (or to taste)
  • 2 cups milk
  • 2 cups low-sodium chicken broth
  • 1 can (14 oz) cream-style corn
  • 1 can (14 oz) corn kernels
  • 2 tbsp hot sauce
  • 2 green onions, chopped
  • 2 tbsp fresh cilantro, chopped
  • 1/2 cup shredded Monterey Jack cheese (optional for topping)


Instructions

  • Heat olive oil in a Dutch oven or soup pot over medium-high heat.
  • Add chicken and cook until cooked through and no longer pink (about 5-7 minutes).
  • Add garlic and onion; cook until the onion is translucent (about 3 minutes).
  • Season with cumin, salt, and pepper.
  • Add milk, chicken broth, cream-style corn, corn kernels, and hot sauce. Bring to a boil.
  • Simmer for 10 minutes, stirring occasionally.
  • Garnish with green onions, cilantro, and shredded Monterey Jack cheese (optional).
