For the Chicken Stew:
- 1 1/2 lbs boneless, skinless chicken thighs (or chicken breasts)

- 1 onion, chopped
- 3 carrots, chopped
- 2 celery stalks, chopped

- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 bay leaf
- Salt and pepper, to taste
- 1/2 cup heavy cream (optional)
- 2 tablespoons all-purpose flour (to thicken)
For the Dumplings:
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup whole milk
- 2 tablespoons butter, melted
- 2 tablespoons fresh parsley, chopped (optional)
Instructions
- Prepare the Chicken Stew:
- Heat olive oil or butter in a large pot over medium heat. Season chicken with salt and pepper, brown on both sides, then remove and set aside.
- In the same pot, cook onion, carrots, celery, and garlic until softened. Add chicken broth, thyme, parsley, and bay leaf. Return chicken to pot, simmer for 25-30 minutes.
- Shred the Chicken:
- Remove chicken from pot, shred with forks, and return to the pot. Stir in heavy cream if desired.
- Thicken the Broth (Optional):
- Mix flour with water to make a slurry. Stir into the broth and simmer until slightly thickened.
- Make the Dumplings:
- Combine flour, baking powder, and salt. Stir in milk and melted butter until just combined. Drop spoonfuls of dough onto the stew.
- Cook the Dumplings:
- Cover pot and steam dumplings for 15 minutes. Do not lift the lid while cooking.
- Serve:
- Remove bay leaf and serve hot, garnished with parsley if desired.
