Description

For the Chicken Stew:

  • 1 1/2 lbs boneless, skinless chicken thighs (or chicken breasts)
  • 1 tablespoon olive oil or butter
  • 1 onion, chopped
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • Salt and pepper, to taste
  • 1/2 cup heavy cream (optional)
  • 2 tablespoons all-purpose flour (to thicken)

For the Dumplings:

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup whole milk
  • 2 tablespoons butter, melted
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  • Prepare the Chicken Stew:
    • Heat olive oil or butter in a large pot over medium heat. Season chicken with salt and pepper, brown on both sides, then remove and set aside.
    • In the same pot, cook onion, carrots, celery, and garlic until softened. Add chicken broth, thyme, parsley, and bay leaf. Return chicken to pot, simmer for 25-30 minutes.
  • Shred the Chicken:
    • Remove chicken from pot, shred with forks, and return to the pot. Stir in heavy cream if desired.
  • Thicken the Broth (Optional):
    • Mix flour with water to make a slurry. Stir into the broth and simmer until slightly thickened.
  • Make the Dumplings:
    • Combine flour, baking powder, and salt. Stir in milk and melted butter until just combined. Drop spoonfuls of dough onto the stew.
  • Cook the Dumplings:
    • Cover pot and steam dumplings for 15 minutes. Do not lift the lid while cooking.
  • Serve:
    • Remove bay leaf and serve hot, garnished with parsley if desired.
