- 4 chicken thighs or breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 small onion, finely chopped
- 2 tablespoons all-purpose flour
- 2 cups chicken broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- 4 large potatoes, peeled and chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup milk
- 2 tablespoons butter
Instructions
- Boil potatoes in salted water until tender, about 15 minutes. Drain and mash with butter, milk, and shredded cheddar cheese. Set aside and keep warm.
- Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper, then cook until browned and cooked through, about 6-7 minutes per side. Remove chicken and keep warm.
- In the same skillet, add onion and garlic; sauté until fragrant and translucent.
- Sprinkle flour over onions and garlic; cook, stirring constantly, for 1-2 minutes to make a roux.
- Gradually whisk in chicken broth and cream, cooking until the gravy thickens.
- Return chicken to the skillet and coat with garlic gravy. Heat through for 2-3 minutes.
- Serve chicken and garlic gravy over cheesy mashed potatoes immediately.

- For extra flavor, add fresh herbs like thyme or rosemary to the gravy.
- You can substitute cheddar with mozzarella or Parmesan in the mashed potatoes.
