Description

Ingredients

  • 4 chicken thighs or breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 4 large potatoes, peeled and chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 2 tablespoons butter

Instructions

  1. Boil potatoes in salted water until tender, about 15 minutes. Drain and mash with butter, milk, and shredded cheddar cheese. Set aside and keep warm.
  2. Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper, then cook until browned and cooked through, about 6-7 minutes per side. Remove chicken and keep warm.
  3. In the same skillet, add onion and garlic; sauté until fragrant and translucent.
  4. Sprinkle flour over onions and garlic; cook, stirring constantly, for 1-2 minutes to make a roux.
  5. Gradually whisk in chicken broth and cream, cooking until the gravy thickens.
  6. Return chicken to the skillet and coat with garlic gravy. Heat through for 2-3 minutes.
  7. Serve chicken and garlic gravy over cheesy mashed potatoes immediately.
