Ingredients
Scale
- 4 boneless, skinless chicken breasts (or thighs)
- 6 medium potatoes (Yukon gold or russet, cut into cubes)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika (optional)
- 1/2 teaspoon dried thyme (or rosemary)
- Salt and pepper, to taste
- 1 tablespoon fresh parsley (chopped, for garnish)
- 1/2 cup grated Parmesan cheese (optional, for topping)
Instructions
- Preheat the Oven:
Preheat your oven to 400°F (200°C). Grease a large baking sheet or 9×13-inch baking dish with olive oil or non-stick cooking spray. - Season the Potatoes:
In a large bowl, toss the cubed potatoes with 1 tablespoon of olive oil, garlic powder, onion powder, paprika, dried thyme (or rosemary), salt, and pepper. Spread the seasoned potatoes in a single layer on the prepared baking sheet or dish. - Prepare the Chicken:
Season both sides of the chicken breasts (or thighs) with salt, pepper, and a little garlic powder or onion powder. Drizzle the chicken with the remaining tablespoon of olive oil. - Assemble the Dish:
Place the seasoned chicken pieces on the baking sheet or in the baking dish, arranging them alongside the potatoes. - Bake:
Bake in the preheated oven for 35-45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender and golden brown. You can check the doneness of the potatoes by piercing them with a fork; they should be soft and easily pierced. - Optional Topping:
In the last 5 minutes of baking, sprinkle the grated Parmesan cheese over the chicken and potatoes for an extra layer of flavor and crispiness. - Serve:
Once baked, remove the dish from the oven and let it rest for a few minutes before serving. Garnish with fresh parsley for added color and freshness. - Enjoy:
Serve the chicken and potatoes with your favorite side dishes or enjoy it on its own!
Notes
- You can add vegetables like carrots, bell peppers, or Brussels sprouts to the bake for added flavor and nutrition. Just toss them in with the potatoes before baking.
- For extra crispy skin on the chicken, broil for 2-3 minutes at the end of baking.
- If you prefer a one-pan meal, you can use a large oven-safe skillet instead of a baking sheet or dish.
