Instructions

  1. Preheat the Oven:
    Preheat your oven to 400°F (200°C). Grease a large baking sheet or 9×13-inch baking dish with olive oil or non-stick cooking spray.
  2. Season the Potatoes:
    In a large bowl, toss the cubed potatoes with 1 tablespoon of olive oil, garlic powder, onion powder, paprika, dried thyme (or rosemary), salt, and pepper. Spread the seasoned potatoes in a single layer on the prepared baking sheet or dish.
  3. Prepare the Chicken:
    Season both sides of the chicken breasts (or thighs) with salt, pepper, and a little garlic powder or onion powder. Drizzle the chicken with the remaining tablespoon of olive oil.

    Place the seasoned chicken pieces on the baking sheet or in the baking dish, arranging them alongside the potatoes.
  5. Bake:
    Bake in the preheated oven for 35-45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender and golden brown. You can check the doneness of the potatoes by piercing them with a fork; they should be soft and easily pierced.
