Description

  • 1 lb (450g) boneless, skinless chicken breasts (cut into 1-inch cubes)
  • 2 medium sweet potatoes (peeled and cut into 1-inch cubes)
  • 1 red bell pepper (cut into 1-inch squares)
  • 1 red onion (cut into 1-inch pieces)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 garlic cloves (minced)
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • 1 teaspoon smoked paprika
  • Salt and pepper (to taste)
  • Wooden or metal skewers
  • Fresh parsley (chopped, for garnish)
  • Lemon wedges (for serving)

Instructions

  • Preheat oven to 400°F (200°C) or grill to medium-high heat.
  • Boil sweet potatoes for 5-6 minutes, then drain and set aside.
  • In a bowl, whisk together olive oil, lemon juice, garlic, thyme, smoked paprika, salt, and pepper. Marinate the chicken for at least 15 minutes.
  • Assemble the kebabs by threading chicken, sweet potatoes, bell pepper, and red onion onto skewers.
  • Grill for 10-12 minutes or roast for 20-25 minutes until cooked through.
  • Serve garnished with parsley and lemon wedges.
