- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 garlic cloves (minced)
- 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
- 1 teaspoon smoked paprika

Instructions
- Preheat oven to 400°F (200°C) or grill to medium-high heat.
- Boil sweet potatoes for 5-6 minutes, then drain and set aside.
- In a bowl, whisk together olive oil, lemon juice, garlic, thyme, smoked paprika, salt, and pepper. Marinate the chicken for at least 15 minutes.
- Assemble the kebabs by threading chicken, sweet potatoes, bell pepper, and red onion onto skewers.
- Grill for 10-12 minutes or roast for 20-25 minutes until cooked through.
- Serve garnished with parsley and lemon wedges.
