Instructions
- Preheat your oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- In a large bowl, combine the chopped chicken, artichoke hearts, mozzarella cheese, Parmesan cheese, mayonnaise, minced garlic, oregano, salt, and pepper. Mix well until the ingredients are evenly coated.
- Form the mixture into small bite-sized balls, about 1 to 1.5 inches in diameter.
- Place the panko breadcrumbs in a shallow dish. Roll each chicken artichoke ball in the breadcrumbs, pressing gently to coat them evenly.
