Description

Chicken Artichoke Bites are a delicious and savory appetizer that combines tender chicken, creamy artichoke hearts, and melted cheese in one bite-sized treat.   • 1/2 cup panko breadcrumbs

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a large bowl, combine the chopped chicken, artichoke hearts, mozzarella cheese, Parmesan cheese, mayonnaise, minced garlic, oregano, salt, and pepper. Mix well until the ingredients are evenly coated.
  3. Form the mixture into small bite-sized balls, about 1 to 1.5 inches in diameter.
  4. Place the panko breadcrumbs in a shallow dish. Roll each chicken artichoke ball in the breadcrumbs, pressing gently to coat them evenly.
  5. Arrange the breaded chicken artichoke bites on the prepared baking sheet, spacing them out evenly.
  6. Drizzle olive oil over the bites to help them brown and crisp up while baking.
  7. Bake in the preheated oven for 18-20 minutes or until the bites are golden brown and cooked through (internal temperature should reach 165ยฐF or 74ยฐC).
  8. Remove from the oven and let them cool for a few minutes before serving. Garnish with freshly chopped parsley.
