  • 1 large ripe avocado, sliced
  • 4 slices provolone or mozzarella cheese
  • 4 slices sourdough or ciabatta bread (or your favorite bread)
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard (optional)
  • Salt and pepper, to taste
  • Butter, for grilling
  • Fresh lettuce or spinach (optional)
  • Tomato slices (optional)

Instructions

  • Prepare the Spread: In a small bowl, mix the mayonnaise and Dijon mustard (if using) until well combined.
  • Assemble Sandwiches: Spread the mayo mixture on each slice of bread. Layer with chicken, avocado slices, a slice of cheese, and optional lettuce or tomato. Top with the remaining slice of bread.
