Description

Chicken Bell Pepper Ranch Burritos are hearty and flavorful, packed with sautéed chicken, crisp bell peppers, cheese, and a creamy ranch dressing. Wrapped in a warm tortilla, they make a perfect quick lunch or dinner option the whole family will enjoy.


Ingredients

  • 2 cups cooked chicken breast, shredded or chopped
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small red onion, sliced (optional)
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 4 large flour tortillas
  • Cooking spray or butter (for pan-searing burritos, optional)

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add sliced bell peppers (and onion if using), and sauté for 4–5 minutes until slightly tender.
  3. Add cooked chicken, garlic powder, salt, and pepper. Stir and cook for another 2–3 minutes to heat through.
  4. Remove skillet from heat. Stir in ranch dressing and shredded cheese until evenly mixed.
  5. Warm tortillas in the microwave or on a skillet to make them pliable.
  6. Spoon the chicken and pepper mixture evenly onto each tortilla. Fold sides in and roll up burrito-style.
  7. Optional: Lightly spray a skillet with cooking spray or add butter and toast each burrito seam-side down for 2–3 minutes on each side until golden brown.
  8. Serve hot with extra ranch, salsa, or sour cream if desired.

Notes

  • Swap in grilled steak or ground turkey for a different protein option.
  • To make it spicier, add jalapeños or a splash of hot sauce to the filling.
