- 8 oz pasta (penne or fusilli)
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tbsp olive oil
- 4 oz Boursin cheese (garlic & herb flavor)
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
- Add minced garlic and sauté for 1 minute until fragrant.
- Reduce heat to low and stir in Boursin cheese and heavy cream. Mix until cheese melts and sauce is creamy.
- Add cooked pasta and Parmesan cheese to the skillet, tossing to combine and coat the pasta with the sauce.
- Adjust seasoning with salt and pepper if needed.
- Garnish with fresh parsley and serve warm.
