Ingredients

  • 8 oz pasta (penne or fusilli)
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 4 oz Boursin cheese (garlic & herb flavor)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
  3. Add minced garlic and sauté for 1 minute until fragrant.
  4. Reduce heat to low and stir in Boursin cheese and heavy cream. Mix until cheese melts and sauce is creamy.
  5. Add cooked pasta and Parmesan cheese to the skillet, tossing to combine and coat the pasta with the sauce.
  6. Adjust seasoning with salt and pepper if needed.
  7. Garnish with fresh parsley and serve warm.
