Ingredients
For the Casserole Filling:
- 2 cups cooked chicken, shredded or diced (rotisserie chicken works well)
- 1 cup frozen peas and carrots (or your favorite vegetable mix)
- 1/2 cup corn kernels (frozen or fresh)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (10.5 oz) cream of chicken soup (or homemade version)
- 1/2 cup chicken broth (low-sodium)
- 1/2 teaspoon dried thyme
- Salt and pepper, to taste
For the Biscuit Topping:
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried thyme
- 1/4 cup cold butter, cubed
- 1/2 cup milk (or dairy-free alternative)
Instructions
-
Preheat the Oven:
Preheat your oven to 375°F (190°C). Grease a 9×9-inch or similar-sized baking dish. -
Prepare the Casserole Filling:
In a large skillet, sauté the diced onion and garlic over medium heat in a bit of olive oil for 2-3 minutes, until softened.
Add the cooked chicken, peas and carrots, corn, cream of chicken soup, chicken broth, thyme, salt, and pepper. Stir everything together and cook for 5-7 minutes, until heated through and well combined.
Transfer the filling mixture to the prepared baking dish and spread it out evenly. -
Make the Biscuit Topping:
In a medium bowl, whisk together the flour, baking powder, salt, garlic powder, and thyme.
Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Add the milk and stir gently until a dough forms. -
Assemble the Casserole:
Drop spoonfuls of the biscuit dough on top of the chicken mixture in the baking dish. Try to cover most of the surface, but it’s okay if there are a few gaps. -
Bake the Casserole:
Bake the casserole in the preheated oven for 25-30 minutes, or until the biscuit topping is golden brown and the filling is bubbling. -
Serve:
Let the casserole cool for a few minutes before serving. Serve hot and enjoy!
Notes
- You can use leftover chicken or rotisserie chicken to save time.
- For a healthier option, you can use whole wheat flour in the biscuit topping.
- Feel free to swap the vegetables to your preference; green beans, bell peppers, or mushrooms would be great alternatives.
- You can also make this casserole ahead of time and refrigerate it, then bake it when you’re ready to serve.
