For the Casserole Filling:

  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works well)
  • 1 cup frozen peas and carrots (or your favorite vegetable mix)
  • 1/2 cup corn kernels (frozen or fresh)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of chicken soup (or homemade version)
  • 1/2 cup chicken broth (low-sodium)
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste

For the Biscuit Topping:

 

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried thyme
  • 1/4 cup cold butter, cubed
  • 1/2 cup milk (or dairy-free alternative)

Instructions

  1. Preheat the Oven:
    Preheat your oven to 375°F (190°C). Grease a 9×9-inch or similar-sized baking dish.

  2. Prepare the Casserole Filling:
    In a large skillet, sauté the diced onion and garlic over medium heat in a bit of olive oil for 2-3 minutes, until softened.
    Add the cooked chicken, peas and carrots, corn, cream of chicken soup, chicken broth, thyme, salt, and pepper. Stir everything together and cook for 5-7 minutes, until heated through and well combined.
    Transfer the filling mixture to the prepared baking dish and spread it out evenly.

  3. Make the Biscuit Topping:
    In a medium bowl, whisk together the flour, baking powder, salt, garlic powder, and thyme.
    Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
    Add the milk and stir gently until a dough forms.

  4. Assemble the Casserole:
    Drop spoonfuls of the biscuit dough on top of the chicken mixture in the baking dish. Try to cover most of the surface, but it’s okay if there are a few gaps.

  5. Bake the Casserole:
    Bake the casserole in the preheated oven for 25-30 minutes, or until the biscuit topping is golden brown and the filling is bubbling.

  6. Serve:
    Let the casserole cool for a few minutes before serving. Serve hot and enjoy!

Notes

  • You can use leftover chicken or rotisserie chicken to save time.
  • For a healthier option, you can use whole wheat flour in the biscuit topping.
