- 1 1/2 lbs boneless, skinless chicken breasts, thinly sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 large onion, sliced
- 2 tablespoons olive oil, divided
- 8 small flour tortillas
- Fajita Seasoning:
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Juice of 1 lime
Instructions
- In a large bowl, combine chicken strips with half of the olive oil, lime juice, and all of the fajita seasoning. Toss to coat and let marinate for 15โ30 minutes (or overnight for best flavor).
- Heat the remaining olive oil in a large skillet over medium-high heat. Add the marinated chicken and cook for 5โ7 minutes, or until fully cooked and slightly charred. Remove from skillet and set aside.
- In the same skillet, add bell peppers and onion. Cook for 5โ6 minutes until tender and slightly caramelized.
- Return the chicken to the skillet and toss everything together until heated through and well combined.
- Warm tortillas in a dry skillet or microwave.
- Serve chicken and veggies in tortillas with toppings like sour cream, guacamole, salsa, or shredded cheese.
