  • 1 teaspoon garlic powder
  • 1/4 cup all-purpose flour (or gluten-free flour)
  • 2 tablespoons olive oil

For the Sauce:

  • 2 shallots, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced (or substitute with tomatoes)
  • 4 cups fresh spinach (or 1 cup frozen, thawed and drained)
  • 1/4 cup chicken broth (or dry white wine)
  • 1/2 cup cream cheese (or reduced-fat version)
  • 1/2 cup half-and-half or heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley or basil, for garnish (optional)

Instructions

  • Prepare the Chicken: Pound the chicken to an even thickness and season with salt, pepper, and garlic powder. Dredge in flour.
  • Cook the Chicken: Heat olive oil in a skillet over medium heat. Cook chicken for 4-5 minutes on each side until golden brown. Remove and set aside.
  • Sauté the Aromatics: In the same skillet, cook shallots and garlic until fragrant. Add bell pepper and cook for 2 more minutes.
  • Add the Spinach: Stir in fresh spinach and cook until wilted.
  • Make the Creamy Sauce: Add chicken broth or wine, then stir in cream cheese, half-and-half, and Parmesan. Simmer for 3-4 minutes until thickened.
  • Combine: Return chicken to skillet and spoon sauce over it. Simmer for another 2-3 minutes.
  • Serve: Garnish with fresh herbs and serve with pasta, rice, or bread.
