- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1 package (5.2 oz) Boursin Garlic & Herb cheese
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- Salt and pepper, to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook until golden brown and cooked through, about 5-7 minutes per side. Remove chicken and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Pour in chicken broth and scrape any browned bits from the bottom of the pan.
- Reduce heat to medium-low and stir in heavy cream and Boursin cheese. Stir until cheese is melted and sauce is smooth.
- Return chicken breasts to the skillet, spoon sauce over them, and simmer for 3-5 minutes to warm through and let flavors combine.
- Garnish with chopped parsley before serving.
Notes
- Use chicken thighs instead of breasts for juicier meat.
- Serve with mashed potatoes, pasta, or steamed vegetables.
- For a lighter version, substitute heavy cream with half-and-half.
