  • 4 boneless, skinless chicken breasts (or cutlets)
  • 1/2 cup all-purpose flour (for dredging)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 oz cremini or white mushrooms, sliced
  • 2 cloves garlic, minced
  • 3/4 cup Marsala wine (dry preferred)
  • 3/4 cup chicken broth
  • 1/2 cup heavy cream (optional for creamy version)
  • 1 tablespoon chopped fresh parsley (for garnish)


Instructions

  1. Pound chicken breasts to an even thickness (about 1/2 inch). Season with salt and pepper, then dredge lightly in flour, shaking off excess.
  2. In a large skillet, heat olive oil over medium-high heat. Sear chicken 3–4 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, reduce heat to medium and add butter. Sauté mushrooms for 5–6 minutes until browned. Add garlic and cook for 30 seconds.
  4. Pour in Marsala wine and scrape the bottom of the pan. Simmer for 2–3 minutes to reduce slightly.
  5. Add chicken broth and optional heavy cream. Simmer for 5–6 minutes until sauce thickens slightly.
  6. Return chicken to the skillet and simmer for another 3–4 minutes to warm through and coat with sauce.
  7. Garnish with fresh parsley and serve hot over mashed potatoes, pasta, or rice.

Notes

  • Use dry Marsala wine for best flavor; sweet Marsala will make the sauce much sweeter.
  • Make it dairy-free by skipping the cream and butter (use olive oil only).
  • For extra flavor, add a splash of balsamic vinegar to the sauce.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop.
