- 2 boneless, skinless chicken breasts, sliced into strips
- 3 cloves garlic, minced

- 1 can (14.5 oz) diced tomatoes
- 1/2 cup chicken broth
- 1 cup heavy cream
- 8 oz pasta (penne or fettuccine work best)
- 1 1/2 cups fresh mozzarella cheese, shredded
- Salt and pepper, to taste
- Fresh basil or parsley, chopped (for garnish)
Instructions
- Cook the Chicken:
Heat olive oil in a large skillet over medium heat. Add the sliced chicken and season with salt, pepper, basil, oregano, and red pepper flakes (if using). Cook until the chicken is browned and fully cooked, about 6–8 minutes. Remove the chicken from the skillet and set aside. - Make the Sauce:
In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Pour in the diced tomatoes (with juices), chicken broth, and heavy cream. Stir to combine and bring the mixture to a simmer. - Cook the Pasta:
While the sauce is simmering, cook the pasta in a large pot of salted boiling water according to package instructions. Drain and set aside. - Combine the Pasta and Chicken:
Add the cooked pasta and chicken back into the skillet with the sauce. Stir to coat the pasta and chicken evenly in the sauce. Let it cook for 2-3 minutes to allow the flavors to meld together. - Add the Mozzarella:
Sprinkle the shredded mozzarella over the pasta and stir until the cheese is melted and everything is well coated. Adjust seasoning with salt and pepper, if needed. - Serve:
Divide the pasta among plates and garnish with fresh basil or parsley. Serve immediately.
