Description

This Chicken Parmesan Lasagna Skillet is a one-pan dish that combines all the delicious flavors of traditional chicken parmesan and lasagna without the hassle of layering! With tender chicken, rich marinara sauce, gooey melted cheese, and perfectly cooked noodles, this skillet meal is a quick and easy dinner option for busy weeknights.

  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts (or thighs), cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (24 oz) jar marinara sauce
  • 2 cups water or chicken broth
  • 8 oz uncooked lasagna noodles, broken into pieces
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

 

  • Fresh basil or parsley, for garnish (optional)

Instructions

  1. Cook the chicken:
    In a large skillet or Dutch oven, heat olive oil over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook for 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

  2. Sauté the aromatics:
    In the same skillet, add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.

  3. Simmer the sauce:
    Add the marinara sauce and water (or chicken broth) to the skillet, stirring to combine. Bring to a simmer, then add the broken lasagna noodles, dried basil, oregano, and crushed red pepper flakes (if using). Stir everything together, making sure the noodles are submerged in the sauce.
    Cover the skillet and cook for about 15 minutes, stirring occasionally, until the noodles are tender and the sauce has thickened.

  4. Add the chicken:
    Once the noodles are cooked, return the cooked chicken to the skillet, stirring to combine. Let everything cook together for another 2-3 minutes.

  5. Top with cheese:
    Sprinkle the shredded mozzarella and grated Parmesan cheese over the top of the skillet. Cover again and cook for an additional 2-3 minutes until the cheese is melted and bubbly.

  6. Serve:

Notes

  • You can make this dish with ground chicken or turkey if preferred.
