Chicken Parmesan Sandwiches that you can make at home for a comforting meal. This classic sandwich features crispy chicken cutlets, gooey mozzarella, and flavorful pesto mayo, all served on a toasted ciabatta bun. Perfect for lunch or dinner!

- 4 boneless, skinless chicken breasts (thin cut)
- 1 cup panko breadcrumbs
- 1/2 cup Parmesan cheese, grated
- 1/3 cup all-purpose flour
- 2 eggs, whisked
- 1 tsp each salt, pepper, and garlic powder
- 4 ciabatta buns
- 1 cup pasta sauce (your favorite)
- 1 cup shredded mozzarella cheese
- 1/4 cup pesto sauce
- 1/4 cup mayonnaise
- Fresh parsley, chopped (optional)
Instructions
- Preheat the Oven:
Preheat your oven to 400°F (200°C) and line a baking sheet with aluminum foil. Spray with nonstick spray. - Set Up Breading Station:
In three shallow dishes, prepare the breading:- Dish 1: Whisk the eggs.
- Dish 2: Mix flour with salt, pepper, and garlic powder.
- Dish 3: Combine panko breadcrumbs and Parmesan cheese.
- Bread the Chicken:
Dip each chicken breast into the egg mixture, then coat in the flour mixture, and finally press into the panko-Parmesan mixture until well-coated. Place the breaded chicken on the prepared baking sheet. - Bake the Chicken:
Bake the chicken for 20 minutes. Remove from the oven, spoon pasta sauce over each chicken breast, and sprinkle with shredded mozzarella. Return to the oven for another 10 minutes, or until the cheese is melted and bubbly. - Prepare Pesto Mayo:
In a small bowl, mix pesto sauce and mayonnaise until combined. - Assemble the Sandwiches:
Spread the pesto mayo on the bottom half of each ciabatta bun. Spread a bit of extra pasta sauce on the top half of the buns. Place the baked chicken on the bottom bun, then top with the other half of the bun. - Serve:
Garnish with fresh parsley or basil if desired, and enjoy!
