Description

A comforting homemade meal featuring crispy chicken cutlets, gooey mozzarella, and flavorful pesto mayo, all served on a toasted ciabatta bun. Perfect for lunch or dinner!


Ingredients

  • 4 boneless, skinless chicken breasts (thin cut)
  • 1 cup panko breadcrumbs
  • 1/2 cup Parmesan cheese, grated
  • 1/3 cup all-purpose flour
  • 2 eggs, whisked
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 4 ciabatta buns
  • 1 cup pasta sauce (your favorite)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup pesto sauce
  • 1/4 cup mayonnaise
  • Fresh parsley, chopped (optional)

Instructions

  • Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with aluminum foil. Spray with nonstick spray.
  • Set Up Breading Station: Prepare three shallow dishes for the breading:
    • Dish 1: Whisk the eggs.
    • Dish 2: Mix flour with salt, pepper, and garlic powder.
    • Dish 3: Combine panko breadcrumbs and Parmesan cheese.
  • Bread the Chicken: Dip each chicken breast into the egg mixture, coat in the flour mixture, and press into the panko-Parmesan mixture. Place on the baking sheet.
  • Bake the Chicken: Bake for 20 minutes. Remove from the oven, spoon pasta sauce over each chicken breast, and sprinkle with mozzarella. Return to the oven for another 10 minutes, until cheese is melted and bubbly.
  • Prepare Pesto Mayo: Mix pesto sauce and mayonnaise in a small bowl until combined.
  • Assemble the Sandwiches: Spread pesto mayo on the bottom half of each ciabatta bun. Spread extra pasta sauce on the top half. Place baked chicken on the bottom bun and top with the other half.
  • Serve: Garnish with fresh parsley or basil if desired, and enjoy!

Notes

  • Use sturdy ciabatta buns for a better structure.
  • Air fry the chicken at 375°F (190°C) for about 10 minutes if preferred.
