- 2 large boneless, skinless chicken breasts (cut in half horizontally to make 4 cutlets)
- Salt and black pepper to taste
- 1/2 cup all-purpose flour (for dredging)
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter (divided)
- 1/2 cup dry white wine (or chicken broth)
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice (about 1–2 lemons)
- 2 tablespoons capers, drained
- 2 tablespoons chopped fresh parsley (for garnish)
- Lemon slices (optional, for garnish)
Instructions
- Season chicken cutlets with salt and pepper. Dredge in flour, shaking off any excess.
- In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat.
- Add chicken and cook for 3–4 minutes per side until golden brown and cooked through. Transfer to a plate and keep warm.
- In the same skillet, add white wine and scrape up any browned bits. Simmer for 2 minutes.
- Add chicken broth, lemon juice, and capers. Simmer for another 3–4 minutes until slightly reduced.
- Stir in remaining 1 tablespoon of butter to finish the sauce.
- Return chicken to the skillet and spoon sauce over the top. Simmer 1–2 minutes to warm through.
- Garnish with parsley and lemon slices. Serve immediately over pasta, rice, or with vegetables.
Notes
- Swap white wine with more chicken broth for an alcohol-free version.
- Use thin-sliced chicken breast or pound cutlets for even cooking.
- Great with angel hair pasta or mashed potatoes.
- Capers add a salty tang — rinse them first if you prefer a milder taste.
