Description

  • 2 large boneless, skinless chicken breasts (cut in half horizontally to make 4 cutlets)
  • Salt and black pepper to taste
  • 1/2 cup all-purpose flour (for dredging)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter (divided)
  • 1/2 cup dry white wine (or chicken broth)
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice (about 12 lemons)
  • 2 tablespoons capers, drained
  • 2 tablespoons chopped fresh parsley (for garnish)
  • Lemon slices (optional, for garnish)


Instructions

  1. Season chicken cutlets with salt and pepper. Dredge in flour, shaking off any excess.
  2. In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat.
  3. Add chicken and cook for 3–4 minutes per side until golden brown and cooked through. Transfer to a plate and keep warm.
  4. In the same skillet, add white wine and scrape up any browned bits. Simmer for 2 minutes.
  5. Add chicken broth, lemon juice, and capers. Simmer for another 3–4 minutes until slightly reduced.
  6. Stir in remaining 1 tablespoon of butter to finish the sauce.
  7. Return chicken to the skillet and spoon sauce over the top. Simmer 1–2 minutes to warm through.
  8. Garnish with parsley and lemon slices. Serve immediately over pasta, rice, or with vegetables.

  • Swap white wine with more chicken broth for an alcohol-free version.
  • Use thin-sliced chicken breast or pound cutlets for even cooking.
