Spinach Alfredo Sauce:

  • 2 tbsp butter
  • 1 clove garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • Salt and pepper, to taste

Instructions

Meatballs:

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix Ingredients: In a large bowl, combine the ground chicken, ricotta cheese, grated Parmesan, egg, breadcrumbs, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Form Meatballs: Shape the mixture into meatballs about 1–1.5 inches in diameter and place them on the prepared baking sheet.
  4. Bake: Bake for 20-25 minutes, or until the meatballs are golden and fully cooked through, with an internal temperature of 165°F (74°C).

Spinach Alfredo Sauce:

  1. Sauté Garlic: In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté until fragrant, about 1 minute.
  2. Add Cream and Parmesan: Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese, allowing it to melt and thicken the sauce.
  3. Add Spinach: Add the chopped spinach and cook until wilted and incorporated into the sauce, seasoning with salt and pepper to taste.

Serve:

  1. Combine and Serve: Place meatballs on top of pasta (if desired) and pour the spinach Alfredo sauce over them. Serve warm and enjoy!
