  • 4 chicken sausages, sliced into rounds
  • 1 tablespoon olive oil
  • 1 medium zucchini, sliced into half-moons
  • 1 pint cherry or grape tomatoes, halved
  • 3 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • Salt and black pepper to taste
  • 8 oz pasta (penne, spaghetti, or your choice)
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup grated Parmesan cheese (optional for garnish)
  • Fresh basil or parsley, chopped (optional for garnish)

Instructions

  1. Cook the pasta according to the package instructions, then drain and set aside, reserving a little pasta water (about 1/4 cup) for the sauce.
  2. Heat the olive oil in a large skillet over medium heat. Add the sliced chicken sausages and cook for 5-7 minutes, until browned and cooked through. Remove the sausages from the skillet and set them aside.
  3. In the same skillet, add the zucchini and cook for about 3-4 minutes until slightly tender. Add the garlic, dried oregano, basil, and red pepper flakes (if using). Cook for another 1-2 minutes until fragrant.
  4. Add the halved tomatoes and cook for 3-4 minutes until they start to soften and release their juices.
  5. Pour in the chicken broth and bring the mixture to a simmer, scraping any bits from the bottom of the pan. Let it simmer for 2-3 minutes, allowing the sauce to thicken slightly.
  6. Add the cooked pasta to the skillet, along with the reserved pasta water if needed to loosen the sauce. Stir to combine.
  7. Return the cooked chicken sausages to the skillet, mixing everything together. Cook for another 2-3 minutes until everything is heated through.
  8. Season with salt and pepper to taste, then garnish with grated Parmesan and fresh herbs if desired.

Notes

  • You can use any kind of chicken sausage (spicy or mild) depending on your flavor preference.
  • For a low-carb version, substitute the pasta with zucchini noodles or spaghetti squash.
