- 1 medium zucchini, sliced into half-moons
- 1 pint cherry or grape tomatoes, halved
- 3 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional, for heat)
- Salt and black pepper to taste
- 8 oz pasta (penne, spaghetti, or your choice)
- 1/2 cup low-sodium chicken broth
- 1/4 cup grated Parmesan cheese (optional for garnish)
- Fresh basil or parsley, chopped (optional for garnish)
Instructions
- Cook the pasta according to the package instructions, then drain and set aside, reserving a little pasta water (about 1/4 cup) for the sauce.
- Heat the olive oil in a large skillet over medium heat. Add the sliced chicken sausages and cook for 5-7 minutes, until browned and cooked through. Remove the sausages from the skillet and set them aside.
- In the same skillet, add the zucchini and cook for about 3-4 minutes until slightly tender. Add the garlic, dried oregano, basil, and red pepper flakes (if using). Cook for another 1-2 minutes until fragrant.
- Add the halved tomatoes and cook for 3-4 minutes until they start to soften and release their juices.
- Pour in the chicken broth and bring the mixture to a simmer, scraping any bits from the bottom of the pan. Let it simmer for 2-3 minutes, allowing the sauce to thicken slightly.
- Add the cooked pasta to the skillet, along with the reserved pasta water if needed to loosen the sauce. Stir to combine.
- Return the cooked chicken sausages to the skillet, mixing everything together. Cook for another 2-3 minutes until everything is heated through.
- Season with salt and pepper to taste, then garnish with grated Parmesan and fresh herbs if desired.
