Description

This Chicken Scallopini recipe features tender chicken simmered in a flavorful brown gravy and tomato sauce, served over al dente spaghetti. It’s a comforting and easy-to-make Italian-inspired dish perfect for any weeknight dinner.

For the Chicken and Sauce:

  • 1 packet brown gravy mix (0.87 oz)
  • 2 small boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 3 tablespoons flour
  • 12 tablespoons olive oil
  • 1 tablespoon salted butter
  • 1 small yellow onion, sliced
  • 3 cloves garlic, minced
  • 1 cup dry white wine (or chicken broth)
  • 8 oz tomato sauce

For the Pasta:

  • 3/4 lb thin spaghetti (or slightly less for a saucier dish)

Seasonings:

  • 1/2 teaspoon each: Italian seasoning, parsley, mustard powder
  • 1/4 teaspoon salt

Instructions

  • Prepare the Gravy Mixture: In a large measuring cup, combine the gravy mix with 1 cup of cold water. Add the tomato sauce and seasonings; set aside.
  • Prep and Sear Chicken: Cut chicken into equal-sized cubes, season with salt and pepper, sprinkle with flour, and toss to coat. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 3-4 minutes, turning to brown all sides. Remove and set aside.
  • Deglaze the Pan: Turn off heat and add 1/4 cup of wine. Return to medium heat and use a spatula to scrape the browned bits from the skillet.
  • Cook Onions and Garlic: Add butter and onions, cooking over medium heat for about 20 minutes until onions are soft and caramelized. Add garlic and cook for another minute.
  • Add Wine and Reduce: Add remaining wine and simmer for 5 minutes to reduce slightly.
  • Add Gravy Mixture: Pour the gravy mixture into the skillet. Bring to a boil, then reduce to a simmer. Add chicken back to the pan.
  • Cook Pasta: Meanwhile, cook spaghetti in salted water until al dente. Drain.
  • Combine and Serve: Toss the cooked spaghetti in the sauce. Garnish with parsley and serve with garlic bread.

Notes

For extra flavor, you can add a splash of lemon juice or a sprinkle of red pepper flakes to the sauce.
