- 4 boneless, skinless chicken breasts
- 1 medium eggplant, sliced into 1/2-inch rounds
- 4 slices prosciutto
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs (preferably Italian-style)
- 1/2 cup marinara sauce
- 1 cup fresh mozzarella, sliced
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh basil, chopped
- 2 tablespoons olive oil (for frying)
- Salt and pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper. Dredge each breast in flour, dip into the beaten eggs, and coat with breadcrumbs, pressing gently to adhere.
- In a large skillet, heat the olive oil over medium-high heat. Fry the chicken breasts for 4-5 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, lightly fry the eggplant slices until golden on both sides (about 2-3 minutes per side). Set aside on paper towels to drain excess oil.
- Place the fried chicken breasts on a baking sheet. Top each breast with a slice of prosciutto, then layer with a couple of eggplant slices and a slice of mozzarella.
- Spoon a tablespoon of marinara sauce over the mozzarella and sprinkle with Parmesan cheese.
- Bake the chicken in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and sprinkle with fresh basil before serving.
Notes
- Serve with a side of pasta or a simple green salad for a complete meal.
- If you prefer, you can swap out the prosciutto for thin slices of ham or omit it for a lighter version.
- For an extra crispy coating, use panko breadcrumbs instead of regular breadcrumbs.
