  • 4 boneless, skinless chicken breasts
  • 1 medium eggplant, sliced into 1/2-inch rounds
  • 4 slices prosciutto
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs (preferably Italian-style)
  • 1/2 cup marinara sauce
  • 1 cup fresh mozzarella, sliced
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons olive oil (for frying)
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper. Dredge each breast in flour, dip into the beaten eggs, and coat with breadcrumbs, pressing gently to adhere.
  3. In a large skillet, heat the olive oil over medium-high heat. Fry the chicken breasts for 4-5 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, lightly fry the eggplant slices until golden on both sides (about 2-3 minutes per side). Set aside on paper towels to drain excess oil.
  5. Place the fried chicken breasts on a baking sheet. Top each breast with a slice of prosciutto, then layer with a couple of eggplant slices and a slice of mozzarella.
  6. Spoon a tablespoon of marinara sauce over the mozzarella and sprinkle with Parmesan cheese.
  7. Bake the chicken in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and sprinkle with fresh basil before serving.

Notes

  • Serve with a side of pasta or a simple green salad for a complete meal.
  • If you prefer, you can swap out the prosciutto for thin slices of ham or omit it for a lighter version.
  • For an extra crispy coating, use panko breadcrumbs instead of regular breadcrumbs.
