Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Sauté for 5 minutes until vegetables begin to soften.
  2. Add garlic and cook for 1 more minute until fragrant.
  3. Pour in chicken broth and add chicken, bay leaf, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30–35 minutes, until chicken is cooked through.
  4. Remove chicken from the pot, shred the meat, and discard bones and skin.
