Description

This Chicken Stir Fry is a fast, wholesome meal made with juicy chicken breast, crisp-tender vegetables, and a savory homemade stir-fry sauce. It’s loaded with flavor, easy to customize, and ready in under 30 minutes!


Ingredients

  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons vegetable oil, divided
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1/2 cup sugar snap peas
  • 1 small carrot, julienned
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • Salt and black pepper to taste
  • For the Sauce:
  • 1/3 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1/4 cup chicken broth or water
  • 1 teaspoon sesame oil (optional)


Instructions

  1. In a small bowl, whisk together soy sauce, honey, vinegar, cornstarch, chicken broth, and sesame oil. Set aside.
  2. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add sliced chicken, season with salt and pepper, and stir-fry for 4–5 minutes until golden and cooked through. Remove to a plate.
  3. Add the remaining tablespoon of oil to the skillet. Add broccoli, bell peppers, carrots, and snap peas. Stir-fry for 3–4 minutes until vegetables are crisp-tender.
  4. Stir in garlic and ginger and cook for 30 seconds until fragrant.
  5. Return chicken to the skillet. Pour in the sauce and stir everything together to coat evenly.
  6. Cook for 1–2 minutes until the sauce thickens and everything is heated through.
  7. Serve hot over rice or noodles. Garnish with sesame seeds or sliced green onions if desired.

  • Use pre-cut stir-fry vegetables to save time.
  • Make it spicy by adding sriracha or red pepper flakes to the sauce.
  • Swap chicken for beef, shrimp, or tofu for variation.
