  • 1 box (6 oz) stuffing mix (or homemade stuffing, if preferred)

  • 1 can (10.5 oz) cream of chicken soup (or mushroom soup for a twist)

  • 1 cup chicken broth

  • 1/2 cup sour cream (optional for creamier texture)

  • 1/2 cup shredded cheddar cheese (optional)

  • 1 tablespoon butter (for greasing the casserole dish)

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • Salt and pepper, to taste

  • Fresh parsley for garnish (optional)


Instructions

  1. 1. Prepare the Chicken:

    • Preheat the oven to 350°F (175°C).

    • Season the chicken breasts with salt, pepper, garlic powder, and onion powder. If desired, you can lightly pan-sear the chicken in a skillet over medium heat for 2-3 minutes per side to give them a golden color (this step is optional, but it adds flavor).

    2. Make the Stuffing:

    • In a large bowl, combine the stuffing mix, chicken broth, and sour cream (if using). Stir to combine, ensuring the stuffing is moistened. Set aside.

    3. Assemble the Casserole:

    • Grease a 9×13-inch casserole dish with butter or non-stick spray.

    • Place the seasoned chicken breasts in the bottom of the casserole dish.

    • Spread the stuffing mixture evenly over the top of the chicken.

    • Pour the cream of chicken soup over the stuffing, spreading it out evenly. If you’d like a cheesy casserole, sprinkle the shredded cheddar cheese over the top.

    4. Bake:

    • Cover the casserole with aluminum foil and bake for 25-30 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the chicken is fully cooked (internal temperature should reach 165°F) and the stuffing is golden brown on top.

    5. Serve:

    • Garnish with fresh parsley if desired and serve hot. This casserole pairs wonderfully with roasted vegetables or a side salad.

Notes

  • Make-Ahead: This casserole can be assembled a day ahead and stored in the fridge. Just bake it the next day as directed.

  • Chicken: You can use leftover cooked chicken or rotisserie chicken for a quicker version.
