  • Salt and pepper to taste

For the Spicy Butter Sauce:

  • 1/4 cup unsalted butter, melted
  • 2 tablespoons hot sauce (adjust to your spice level)
  • 1 tablespoon lemon juice
  • 1 tablespoon honey (optional for sweetness)
  • 1/2 teaspoon smoked paprika

Instructions

  • Prepare the Chicken Wings:
    • Start by cleaning and trimming the chicken wings. If you’d like, you can remove the tips or leave them on for extra flavor.
  • Cook the Chicken Wings:
    • In a large pot, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
    • Add the chicken wings to the pot and sear them for about 3-5 minutes on each side, just to brown them slightly.
  • Simmer the Chicken Wings:
    • Add the chicken broth, water, quartered onion, halved lemon, chopped celery, chopped carrot, and bell pepper (if using) to the pot. Stir in the bay leaves, paprika, thyme, cayenne pepper, salt, and pepper.
    • Bring everything to a boil, then reduce the heat to low and let it simmer for 30-40 minutes, or until the chicken wings are cooked through and tender.
  • Make the Spicy Butter Sauce:
    • In a small bowl, whisk together the melted butter, hot sauce, lemon juice, honey (if using), and smoked paprika until smooth.
