- 4 large whole wheat or spinach wraps
- 2 tablespoons olive oil
- Juice of 1 lemon

- Salt and pepper, to taste

Instructions
- In a bowl, mash chickpeas slightly with a fork, leaving some whole for texture.
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper to make the dressing.
- Add chopped red onion, cucumber, cherry tomatoes, parsley, and dressing to the mashed chickpeas. Mix well.
- Optional: Stir in crumbled feta cheese for extra flavor.
- Lay out the wraps and evenly distribute the chickpea salad onto each.
- Roll up the wraps tightly, slice in half if desired, and serve immediately.
