Ingredients

  • 4 large whole wheat or spinach wraps
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • Optional: crumbled feta cheese

Instructions

  1. In a bowl, mash chickpeas slightly with a fork, leaving some whole for texture.
  2. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper to make the dressing.
  3. Add chopped red onion, cucumber, cherry tomatoes, parsley, and dressing to the mashed chickpeas. Mix well.
  4. Optional: Stir in crumbled feta cheese for extra flavor.
  5. Lay out the wraps and evenly distribute the chickpea salad onto each.
  6. Roll up the wraps tightly, slice in half if desired, and serve immediately.
