- 1 tablespoon butter (for toasting)
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped bell pepper
- 1–2 green chilies, finely chopped (adjust to taste)
- 1/2 cup canned tomato, finely chopped (or fresh tomatoes)
- 1 tablespoon tomato ketchup
- 1 tablespoon chili sauce (adjust for spice level)
- 1/2 teaspoon oregano
- 1/2 teaspoon chili flakes (optional, for extra heat)
- 1/4 cup grated mozzarella cheese
- 1/4 cup grated cheddar cheese
- Salt and pepper, to taste
- Fresh cilantro leaves, chopped (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C) or prepare your toaster oven.
- Heat a pan over medium heat and add a little butter. Once the butter melts, add the chopped onions, bell peppers, and green chilies. Sauté for about 2 minutes until they soften.
- Add the chopped tomatoes to the pan and cook for another 2-3 minutes, allowing the tomatoes to soften and release their juices.
- Stir in the ketchup, chili sauce, oregano, chili flakes (if using), salt, and pepper. Cook the mixture for another 3-4 minutes until it thickens slightly. Taste and adjust the seasoning as needed.
- While the chili mixture is cooking, lightly butter both sides of the bread slices and toast them in the oven or on a griddle until they are golden and crispy.
- Once the toast is ready, spoon the chili mixture generously over each slice of toasted bread. Spread it evenly to cover the surface.
- Top each slice with a mix of grated mozzarella and cheddar cheese. You can add more cheese for extra gooeyness if you like.
- Place the prepared toast on a baking tray and bake for 5-7 minutes or until the cheese is melted and bubbly. For extra crispiness, you can broil the toast for the last 1-2 minutes, keeping a close eye on it to avoid burning.
- Remove from the oven and garnish with chopped cilantro, if desired. Serve hot and enjoy your Chili Cheese Toast!
Notes
- For a non-spicy version, skip the green chilies and chili sauce. You can replace them with some mild tomato sauce.
- Feel free to add other toppings like mushrooms, olives, or jalapeños for extra flavor.
