- 4 large eggs
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1 tablespoon vegetable oil (for cooking)
- 2 cloves garlic, minced
- 1/4 cup green onions, chopped
- 1/2 teaspoon sesame oil
- Salt and pepper, to taste
Instructions
- In a bowl, whisk the eggs with a pinch of salt and pepper. Set aside.
- In a separate bowl, mix the soy sauce, oyster sauce, hoisin sauce, rice vinegar, and sugar. Set aside to make the sauce.
- Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil. Add the sliced beef in a single layer and cook for 2-3 minutes until browned, stirring occasionally. Remove the beef from the skillet and set it aside.
- In the same skillet, add a little more oil if necessary and pour in the beaten eggs. Scramble the eggs gently until they are just set but still soft. Remove them from the skillet and set them aside with the beef.
- In the same skillet, add the minced garlic and cook for 30 seconds until fragrant. Add the sauce mixture and bring it to a simmer, stirring occasionally.
- Add the beef back into the skillet and toss to coat in the sauce. Let it cook for 1-2 minutes until heated through.
- Return the scrambled eggs to the skillet and gently toss everything together. Drizzle with sesame oil and sprinkle with chopped green onions before serving.
- Serve the Chinese Beef and Eggs with steamed rice or noodles for a complete meal.

- You can substitute the beef with chicken or pork if preferred.
