Instructions
- Heat olive oil in a skillet over medium heat. Add diced onion and cook for 3–4 minutes until soft.
- Add garlic and cook for 30 seconds more.
- Stir in ground beef. Cook, breaking apart with a spoon, until browned and fully cooked (about 6–8 minutes). Drain excess fat if needed.
- Add chipotle peppers, adobo sauce, cumin, paprika, salt, and pepper. Stir to combine and simmer for 3–5 minutes to blend flavors.
- Warm mashed potatoes or roasted potato halves and divide into bowls.
- Top each bowl with chipotle beef mixture.
- Sprinkle with cheddar cheese, avocado, sour cream, and cilantro as desired.
- Serve hot and enjoy immediately.
