- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cups cooked, shredded chicken
- 1 (15 oz) can diced tomatoes
- 1 (15 oz) can white beans, drained and rinsed
- 2 cups chicken broth
- 2 tablespoons tomato paste
- 1–2 chipotle peppers in adobo sauce, finely chopped (adjust to taste)
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- 1 1/2 cups all-purpose flour (for biscuit topping)
- 1 tablespoon baking powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 6 tablespoons unsalted butter, cold and cubed
- 1 cup shredded cheddar cheese
- 2/3 cup milk or buttermilk
Instructions
- Preheat oven to 400°F (200°C).
- In a large oven-safe skillet or Dutch oven, heat olive oil over medium heat. Add onion, garlic, and bell peppers; cook until softened, about 5–6 minutes.
- Stir in shredded chicken, diced tomatoes, white beans, chicken broth, tomato paste, chipotle peppers, cumin, paprika, salt, and pepper. Simmer for 10–15 minutes to blend flavors. Remove from heat.
- In a large bowl, whisk together flour, baking powder, garlic powder, and salt. Cut in the cold butter with a pastry cutter or fork until mixture resembles coarse crumbs.
- Stir in shredded cheddar cheese, then add milk and mix until just combined (do not overmix).
- Drop large spoonfuls of biscuit dough on top of the chili, spacing them slightly apart.
- Transfer the skillet to the oven and bake for 20–25 minutes, or until the biscuits are golden brown and cooked through.
- Let cool slightly before serving. Garnish with fresh parsley or green onions, if desired.
Notes
- For extra cheesiness, sprinkle a bit more cheddar over the biscuits before baking.
- You can substitute ground chicken or turkey if you don’t have shredded chicken on hand.
