    • Salt & pepper to taste

    For the Bowl:

    • 2 cups cooked white or brown rice (or cauliflower rice for low-carb)

    • 1/2 cup black beans, drained and rinsed

    • 1/2 cup corn kernels (fresh, canned, or frozen)

    • 1/2 cup cherry tomatoes, halved

    • 1/2 avocado, sliced

    • 2 tbsp chopped red onion

    • Fresh cilantro for garnish

    • Lime wedges for serving

    Optional Lime Crema:

    • 1/4 cup sour cream or Greek yogurt

    • 1 tbsp lime juice

    • 1 tsp lime zest

    • Pinch of salt


Instructions

  1. Marinate the shrimp: In a bowl, toss shrimp with olive oil, chipotle chili powder, smoked paprika, cumin, garlic, lime juice, salt, and pepper. Let marinate for 15–20 minutes.

  2. Cook the shrimp: Heat a skillet over medium-high heat. Add shrimp and cook for 2–3 minutes per side, until opaque and slightly charred. Remove from heat.

  3. Prepare the crema: Mix all crema ingredients in a small bowl until smooth.

  4. Assemble the bowls: Divide the rice among serving bowls. Top with black beans, corn, tomatoes, avocado, red onion, and cooked shrimp.

  5. Finish: Drizzle with lime crema, sprinkle with chopped cilantro, and serve with lime wedges.
