For the Bowl:

1/2 cup black beans, drained and rinsed

1/2 cup corn kernels (fresh, canned, or frozen)

1/2 cup cherry tomatoes, halved

1/2 avocado, sliced

2 tbsp chopped red onion

Fresh cilantro for garnish

Optional Lime Crema:

1/4 cup sour cream or Greek yogurt

1 tbsp lime juice

1 tsp lime zest

Pinch of salt

Instructions

Marinate the shrimp: In a bowl, toss shrimp with olive oil, chipotle chili powder, smoked paprika, cumin, garlic, lime juice, salt, and pepper. Let marinate for 15–20 minutes.

Prepare the crema: Mix all crema ingredients in a small bowl until smooth.
