- In a large bowl, beat the eggs and granulated sugar on high speed until thick and pale, about 5 minutes. Add in the vanilla extract and mix well.
- Gently fold in the dry ingredients until just combined, being careful not to overmix.
- Pour the batter onto the prepared baking sheet, spreading it evenly. Bake for 10-12 minutes or until the cake springs back when lightly touched.
- Roll the Cake:
- While the cake is still warm, carefully lift the parchment paper and roll the cake into a log shape from one short end to the other. Allow it to cool completely in the rolled shape.
- Prepare the Filling:
- In a medium bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Assemble the Roll:
- Unroll the cooled cake and spread the whipped cream filling evenly over the surface. Re-roll the cake tightly, peeling away the parchment paper as you go.
- Prepare the Chocolate Ganache (Optional):
- Heat the heavy cream until just boiling and pour it over the chopped dark chocolate. Let it sit for a minute, then stir until smooth and glossy.
- Finish the Swiss Roll:
- If using ganache, pour it over the rolled cake and spread evenly. Chill the roll for at least 30 minutes before serving.
