Description

A light and airy chocolate sponge cake rolled with a creamy whipped filling and optionally topped with rich chocolate ganache. This elegant dessert is perfect for special occasions or a sweet treat.

Instructions

  • Prepare the Cake:
    • Preheat your oven to 350°F (175°C). Line a 10×15-inch baking sheet with parchment paper and lightly grease it.
    • In a medium bowl, sift together the flour, cocoa powder, baking powder, and salt. Set aside.
    • In a large bowl, beat the eggs and granulated sugar on high speed until thick and pale, about 5 minutes. Add in the vanilla extract and mix well.
    • Gently fold in the dry ingredients until just combined, being careful not to overmix.
    • Pour the batter onto the prepared baking sheet, spreading it evenly. Bake for 10-12 minutes or until the cake springs back when lightly touched.
  • Roll the Cake:
    • While the cake is still warm, carefully lift the parchment paper and roll the cake into a log shape from one short end to the other. Allow it to cool completely in the rolled shape.
  • Prepare the Filling:
    • In a medium bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Assemble the Roll:
    • Unroll the cooled cake and spread the whipped cream filling evenly over the surface. Re-roll the cake tightly, peeling away the parchment paper as you go.
  • Prepare the Chocolate Ganache (Optional):
    • Heat the heavy cream until just boiling and pour it over the chopped dark chocolate. Let it sit for a minute, then stir until smooth and glossy.
  • Finish the Swiss Roll:
    • If using ganache, pour it over the rolled cake and spread evenly. Chill the roll for at least 30 minutes before serving.
