- 150g dark chocolate (70% cocoa solids), chopped (plus extra, finely grated for garnish)
Instructions
- Heat the Milk: In a small pan, bring the milk to a simmer. Remove from heat just before it starts boiling.
- Melt Butter and Sugar: In a separate pan over low-medium heat, add the butter and sugar. Stir until the butter is melted and the sugar has dissolved. Remove from heat.
- Whisk in Cornflour: Stir the cornflour into the butter mixture, whisking thoroughly to ensure there are no lumps.
- Combine Milk and Butter Mixture: Gradually add the warm milk to the butter mixture, whisking continuously until fully combined and smooth.
- Return to Heat: Place the pan back on low heat and gently bring the mixture to a boil, stirring constantly for a few minutes.
- Add Chocolate: Once the mixture is about to boil, add the chopped chocolate and whisk until melted and fully incorporated.
- Chill: Divide the budino between 4-6 glasses or bowls. Chill in the fridge for at least 4 hours.
- Serve: Before serving, grate some extra dark chocolate over the top for garnish.
