- 1 cup cherry pie filling
- Shaved chocolate or chocolate curls (optional, for garnish)
Instructions
- Make the Crust: Preheat oven to 350°F (175°C). In a bowl, combine cookie crumbs, sugar, and melted butter. Press the mixture into the bottom and sides of a 9-inch pie pan. Bake for 8–10 minutes. Let cool completely.
- Prepare the Chocolate Filling: In a saucepan, heat heavy cream over medium heat until just simmering. Remove from heat and add chopped chocolate. Let sit for 1 minute, then stir until smooth.
- In a separate bowl, beat cream cheese until smooth. Add vanilla extract and beat in the melted chocolate mixture until fully combined and silky.
- Gently fold in 1½ cups of cherry pie filling. Pour the chocolate cherry mixture into the cooled crust and smooth the top. Refrigerate for at least 3 hours, or until set.
- Top the Pie: Once set, spread 1 cup of cherry pie filling over the top of the pie. Garnish with chocolate shavings or curls if desired.
- Chill for an additional 30 minutes before serving for best results.
