Instructions

  1. Make the Crust: Preheat oven to 350°F (175°C). In a bowl, combine cookie crumbs, sugar, and melted butter. Press the mixture into the bottom and sides of a 9-inch pie pan. Bake for 8–10 minutes. Let cool completely.
  2. Prepare the Chocolate Filling: In a saucepan, heat heavy cream over medium heat until just simmering. Remove from heat and add chopped chocolate. Let sit for 1 minute, then stir until smooth.
  3. In a separate bowl, beat cream cheese until smooth. Add vanilla extract and beat in the melted chocolate mixture until fully combined and silky.
  4. Gently fold in 1½ cups of cherry pie filling. Pour the chocolate cherry mixture into the cooled crust and smooth the top. Refrigerate for at least 3 hours, or until set.
  5. Top the Pie: Once set, spread 1 cup of cherry pie filling over the top of the pie. Garnish with chocolate shavings or curls if desired.
  6. Chill for an additional 30 minutes before serving for best results.
