  • 1 can (15 oz) pitted dark cherries in syrup (or fresh cherries, pitted)
  • 1/4 cup unsalted butter
  • 1/2 cup packed brown sugar

For the Cake:

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

Instructions

  • Preheat the Oven: Preheat your oven to 350Β°F (175Β°C). Grease a 9Γ—13 inch baking pan.
  • Prepare the Topping: In a small saucepan, melt the butter over medium heat. Stir in the brown sugar until dissolved and bubbly. Pour the mixture into the bottom of the prepared baking pan. Arrange the cherries over the brown sugar mixture, cut side up if using fresh cherries.
  • Make the Cake Batter: In a large mixing bowl, combine the flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt. Whisk until well blended. Add the eggs, milk, vegetable oil, and vanilla extract. Mix on medium speed for about 2 minutes until well combined. Carefully stir in the boiling water (the batter will be thin).
  • Bake the Cake: Pour the cake batter over the cherry topping in the pan. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool and Flip: Remove from the oven and let the cake cool in the pan for about 10 minutes. Run a knife around the edges to loosen the cake. Place a serving platter over the top and carefully flip the cake over onto the platter.
