Instructions
- In a large bowl, beat ricotta, mascarpone, powdered sugar, and vanilla until smooth and creamy.
- Gently fold in the mini chocolate chips.
- Fold in the whipped heavy cream to lighten the filling.
- Pour the filling into the graham cracker crust and smooth the top.
- Refrigerate for at least 4 hours or overnight to set.
- Before serving, sprinkle with chopped pistachios or extra chocolate chips if desired.
- Slice and serve chilled.
