Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, beat the softened cream cheese, butter, and sugar together until smooth and creamy.
- Add the egg and vanilla extract, and mix until fully combined.
- Gradually add the dry ingredients to the wet ingredients and mix until the dough comes together.
- Fold in the chocolate chips (and mini chocolate chips, if using).
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden brown.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For extra cheesecake flavor, you can add a small pinch of lemon zest or a teaspoon of lemon juice to the dough.
- The cookies can be stored in an airtight container for up to 5 days.
- If you prefer a softer cookie, reduce the baking time by 1-2 minutes.
