Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Stir in the vanilla extract, then mix in the flour and salt until a dough forms.
- Fold in the mini chocolate chips and set aside the cookie dough mixture.
- Roll out the puff pastry sheet on a lightly floured surface and cut it into four equal squares.
- Spoon a generous tablespoon of the cookie dough mixture into the center of each puff pastry square.
- Fold each square in half to form a triangle, pressing the edges together with a fork to seal.
- Beat the egg and brush the top of each turnover with the egg wash for a golden finish.
- Bake the turnovers for 15-20 minutes, or until golden brown and puffed.
