Description

Deliciously soft chocolate chip cookies sandwiched with creamy vanilla frosting, perfect for any occasion!

For the Cookies:

  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chocolate chips

For the Filling:

  • 1 cup vanilla frosting
  • Optional: 1/2 cup mini chocolate chips (for rolling the edges)

Instructions

  • Preheat oven: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Make cookie dough: In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy. Beat in the vanilla extract and eggs. In another bowl, combine the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chocolate chips.
  • Bake cookies: Drop tablespoon-sized balls of dough onto the prepared baking sheets, spaced about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden. Allow cookies to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
  • Assemble sandwiches: Once cookies are completely cool, spread a generous amount of vanilla frosting on the bottom side of one cookie. Top with another cookie, bottom side down, and gently press together to adhere.
  • Serve: Enjoy your cookie sandwiches! For an extra treat, roll the edges in mini chocolate chips if desired.
