- 3/4 cup brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 package (3.4 oz) instant vanilla pudding mix
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup semisweet chocolate chips
- 1 cup chopped pecans
- 1/2 cup caramel bits or chopped soft caramel candies
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Add egg and vanilla extract; beat until well combined.
- Stir in instant vanilla pudding mix.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to the wet ingredients, mixing just until combined.
- Fold in chocolate chips, pecans, and caramel bits.
- Drop rounded tablespoons of dough onto prepared baking sheets.
- Bake for 10-12 minutes or until edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Use walnuts instead of pecans if preferred.
- Add a sprinkle of sea salt on top before baking for a sweet-salty contrast.
- Store cookies in an airtight container for up to a week.
