Description

Soft and chewy cookies loaded with chocolate chips, caramel, and pecans, inspired by the classic turtle candy flavors.


Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semisweet chocolate chips
  • 1 cup chopped pecans
  • 1/2 cup caramel bits or chopped soft caramel candies

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add egg and vanilla extract; beat until well combined.
  4. Stir in instant vanilla pudding mix.
  5. In a separate bowl, whisk together flour, baking soda, and salt.
  6. Gradually add dry ingredients to the wet ingredients, mixing just until combined.
  7. Fold in chocolate chips, pecans, and caramel bits.
  8. Drop rounded tablespoons of dough onto prepared baking sheets.
  9. Bake for 10-12 minutes or until edges are lightly golden.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Use walnuts instead of pecans if preferred.
  • Add a sprinkle of sea salt on top before baking for a sweet-salty contrast.
