Instructions

  • Preheat the Oven: Set your oven to 350°F (175°C). Grease a 1.5-quart casserole dish or an 8×8-inch square baking pan.
  • Prepare the Batter: In a medium-sized mixing bowl, whisk together the flour, baking powder, salt, sugar, and cocoa powder. Stir in the melted butter, milk, and vanilla extract until smooth. If using walnuts, fold them in. Spread the batter evenly into the prepared baking dish.
  • Make the Topping: In a separate bowl, mix the sugar, brown sugar, salt, and cocoa powder. Sprinkle the mixture evenly over the batter in the dish—do not stir.
  • Add the Water: Carefully pour the boiling water over the top of the sugar mixture. Do not stir; let it sit as is.
  • Bake: Bake in the preheated oven for 30 minutes, or until the top is almost set. The cake will rise to the top while a rich chocolate pudding forms underneath.
