For the Mint Filling:
- 2 cups powdered sugar
- 2 tablespoons unsalted butter, softened
- 1/4 cup sweetened condensed milk

- 1 tablespoon milk (or more if needed)
For the Chocolate Coating:
- 12 oz semisweet or dark chocolate, chopped (or chocolate chips)
- 2 teaspoons coconut oil (optional, for smoother coating)
Instructions
- In a medium bowl, combine the powdered sugar, softened butter, sweetened condensed milk, peppermint extract, and milk. Stir until the mixture comes together into a smooth, thick dough. If the mixture is too thick, add a little more milk to get the desired consistency.
- Roll the mint filling into small balls or flatten them into round discs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
- Chill the mint patties in the refrigerator for at least 30 minutes, or until they firm up.
- While the patties chill, melt the chocolate. Place the chopped chocolate and coconut oil (if using) in a heatproof bowl. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
- Using a fork or toothpick, dip each chilled mint patty into the melted chocolate, coating it evenly. Let any excess chocolate drip off, then return the patties to the parchment paper.
- Once all the patties are coated, refrigerate them for at least 30 minutes to allow the chocolate to harden.
- Once set, your chocolate-covered mint patties are ready to enjoy! Store them in an airtight container in the refrigerator for up to 1 week.
