Description

These decadent chocolate-covered strawberry brownies combine two of the best desserts into one! Rich, fudgy brownies topped with sweet, juicy strawberries and a luscious layer of chocolate ganache make for a perfect treat for any special occasion or a sweet indulgence.

Ingredients

Scale

For the Brownie Base:

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/2 cup chocolate chips (optional for extra richness)

For the Topping:

  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 1 cup fresh strawberries, hulled and sliced

Instructions

  1. Make the Brownie Base:
    • Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
    • In a medium bowl, whisk together the melted butter and sugar until smooth. Add the eggs and vanilla extract, and mix until well combined.
    • In a separate bowl, combine the cocoa powder, flour, salt, and baking powder. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
    • Fold in the chocolate chips (if using) for extra richness.
    • Pour the brownie batter into the prepared baking pan and spread it out evenly.
    • Bake for 20-25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Let the brownies cool completely in the pan.
  2. Prepare the Chocolate Ganache:
    • In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
    • Remove from heat and add the chocolate chips, stirring until smooth and fully melted.
    • Let the ganache cool for 5 minutes to thicken slightly before pouring over the cooled brownies.
  3. Assemble the Brownies:
    • Once the brownies are completely cooled, pour the chocolate ganache over the brownies and spread it into an even layer.
    • Decorate the top with fresh strawberry slices, arranging them evenly over the ganache.
  4. Chill and Serve:
    • Let the brownies set in the refrigerator for at least 30 minutes, or until the ganache is firm.
    • Cut into squares and serve chilled or at room temperature for a decadent treat!

Notes

  • For a fun twist, drizzle extra melted chocolate over the strawberries before serving.
  • You can use any type of berries for a different flavor, or add chopped nuts for added texture.
  • The brownies can be made a day ahead and kept in the fridge for best results.
