Instructions

  1. Prepare the Pastry:

    • Roll out the pie crusts on a lightly floured surface. Using a round cutter or the edge of a glass, cut the dough into circles, about 4-5 inches in diameter. You should be able to get 8-10 circles from the two sheets of dough.

    • In a microwave-safe bowl, heat the chocolate chips and heavy cream together in 20-second intervals, stirring in between, until the chocolate is completely melted and smooth.
    • Stir in the vanilla extract. If you want the filling to be sweeter, add powdered sugar and mix until smooth.
  3. Assemble the Hand Pies:
    • Spoon about 1-2 teaspoons of the chocolate filling onto the center of each dough circle. Be careful not to overfill them.
    • Fold the dough in half to cover the chocolate, creating a half-moon shape.
    • Use a fork to press the edges of the pie together, sealing the hand pies.
  4. Bake the Hand Pies:
    • Place the assembled hand pies on a baking sheet lined with parchment paper.
    • Sprinkle the tops lightly with granulated sugar for a bit of sweetness and a golden finish.
    • Bake for 12-15 minutes, or until the crust is golden brown and flaky.
