For the Brownies:
- 1/2 cup (113g) unsalted butter, diced into 1 Tbsp pieces
- 2 oz. unsweetened chocolate, chopped
- 4 oz. semi-sweet chocolate, chopped
- 3/4 cup (160g) granulated sugar
- 1/2 cup (110g) packed light brown sugar
- 1/2 tsp fine sea salt
- 2 large eggs
- 1 large egg yolk
- 2 tsp vanilla extract
- 1/2 cup (73g) all-purpose flour
For the Frosting:
- 1 1/2 cups (190g) powdered sugar
- 3 1/2 Tbsp (20g) unsweetened cocoa powder, sifted
- 1/4 cup (56g) salted butter, softened
- 3 Tbsp (45ml) half and half
- 1/2 tsp vanilla extract
Instructions
- Prepare the Baking Dish: Preheat your oven to 350°F (175°C). Butter an 8×8-inch baking dish, then line it with parchment paper, leaving a 2-inch overhang on all sides. Butter the parchment paper as well.
- Melt the Chocolate: In a large microwave-safe mixing bowl, combine the butter, unsweetened chocolate, and semi-sweet chocolate. Heat in the microwave in 20-second intervals, stirring well until melted and smooth. Allow to cool slightly.
- Mix the Batter: Stir in the granulated sugar, brown sugar, and salt until well combined. Add the eggs one at a time, mixing well after each addition. Blend in the egg yolk and vanilla extract. Fold in the flour, mixing just until combined.
- Bake the Brownies: Pour the batter into the prepared baking dish and spread into an even layer. Bake for 28-33 minutes, or until a toothpick inserted comes out with a few moist crumbs. Remove from the oven and let cool completely on a wire rack.
- Make the Frosting: In a medium bowl, blend together powdered sugar, cocoa powder, butter, half and half, and vanilla extract until fluffy. Adjust consistency with more half and half if needed.
- Frost the Brownies: Once cooled, spread the frosting evenly over the brownies. Use the parchment paper overhang to lift out and cut into squares.
