Chocolate Guinness Cake is a rich, decadent cake made with the unique addition of Guinness stout, which enhances the flavor of the chocolate and makes the cake incredibly moist. Topped with a creamy, tangy cream cheese frosting, this cake is perfect for special occasions or as a comforting dessert.

- 1 cup Guinness stout
- 1 cup unsalted butter, cubed
- 3/4 cup unsweetened cocoa powder
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 2/3 cup sour cream
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 8 oz cream cheese, softened
- 1 1/2 cups powdered sugar
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or two 8-inch round cake pans.
- In a saucepan, heat the Guinness stout and butter over medium heat, stirring occasionally, until the butter is melted. Remove from heat and whisk in the cocoa powder until smooth. Let it cool for a few minutes.
- In a large bowl, sift together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the eggs, sour cream, and vanilla extract. Add the wet ingredients to the dry ingredients and mix until just combined.
- Slowly pour the cooled Guinness-chocolate mixture into the batter and mix until smooth. Stir in the buttermilk until fully incorporated.
- Pour the batter into the prepared pan(s) and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat the cream cheese and powdered sugar together until smooth. Add the heavy cream and vanilla extract and beat until fluffy and smooth.
- Once the cake has cooled, frost it with the cream cheese frosting and serve. Enjoy!
Notes
- The stout in the cake adds moisture and depth of flavor, but you can substitute with a non-alcoholic stout or a rich dark beer.
