For the cookies:
- 1 ½ cups all-purpose flour

- ½ cup unsweetened cocoa powder
- 1 cup semi-sweet chocolate chips
- ½ cup M&M’s (regular or mini)
- ½ cup milk chocolate chips (for the lava center)
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.
- Make the dough: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes). Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined. Then, fold in the cocoa powder and chocolate chips until evenly incorporated.
- Create the lava center: Take a small piece of cookie dough (about 1 tablespoon) and flatten it out in your hand. Place a few milk chocolate chips in the center and form the dough around it to seal. Roll the dough into a ball. Repeat with the remaining dough and chocolate chips.
- Add the M&Ms: Once the dough balls are formed, gently press a few M&M’s into the top of each dough ball to create a colorful, fun design.
- Bake the cookies: Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart. Bake for 9-11 minutes or until the edges are set but the centers are still soft.
- Let them cool: Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely. This helps to set the “lava” center.
